Over Kakheti COmpany

Nugzar Ksovreli, van Kakheti Wine Company maakte de iconische Saperavi wijnen uit het Kakhetian gebied, vanaf de wijngaard die eigendom is van de Konchosvili familie. Zwitserse wijnmaker Thierry Fontannaz was gefascineerd door de eeuwenoude Georgische technieken voor het maken van de wijn en raakte geïnspireerd om vanuit de Saperavi wijnen de Bedoba te creëren. de wijnkelders dateren terug naar 1533. Toen werden de traditionele Kakheti wijnen hier geproduceerd en verkocht. Het domein bevindt zich net ten noorden van de Alazani rivier en ligt op 400 meter boven de zeespiegel.

Vinificatie

De druiven worden met de hand geplukt en vervolgens gefermenteerd in roestvrijstalen vaten onder gecontroleerde temperatuur. Na 6 weken gaat een deel van de wijn naar eikenhouten vaten, terwijl het overige deel in roestvrijstalen vaten verblijft voor malolactische gisting. De wijn is een samenstelling van verschillende rijpingsprocessen. Na het bottelen rijpt de wijn nog 12 maanden in de fles, waardoor hij verder ontwikkelt en verfijnt.
