Estate grown and hand picked from the vineyards surrounding Hundred Tree Homestead on Sally’s Hill including the famous Sally’s Paddock vineyard. These exceptional varietal wines reflect the wonderful idiosyncratic characters and flavours of Redbank grapes and the unique style of Sally’s Paddock wines. Made in small batches, hand punched, wild yeast fermented and basket pressed, these wines truly express the potential of single varieties from our non-irrigated vines, which were planted in 1973.

A blend of 66% Cabernet Sauvignon 34% Cabernet Franc. The wine opens with fragrant ripe red fruits, cassis, mixed herbs and floral aromas. As it opens, darker berries, spices and violets arise. Wood aged maturity is also evident. Good palate intensity due to firm tannins with dark cherry liqueur and plum flavours predominating. Generous fruit, oak spice and black and white pepper add complexity, depth and structure resulting in a long savoury finish. Can be enjoy now, but will continue to develop in bottle for the next 10-15 years.
