1. Chitol Macher Muitha (Bengali Fish Dumplings Curry)
Ingredients:
- Chitol fish (minced) – 500g
- Ginger paste – 1 tsp
- Garlic paste – 1 tsp
- Green chilies – 3 (chopped)
- Salt – 1 tsp
- Turmeric – ½ tsp
- Boiled potato – 1 (mashed)
- Mustard oil – 4 tbsp
- Bay leaf – 1
- Cumin seeds – ½ tsp
- Tomato – 1 (chopped)
- Water – 2 cups
Steps:
- Mix fish mince with mashed potato, ginger, garlic, green chilies, salt, turmeric.
- Shape into oval dumplings. Boil in water for 7–8 mins. Set aside.
- In mustard oil, add bay leaf, cumin, tomato. Cook till soft.
- Add turmeric, salt, water. Boil, then add dumplings.
- Simmer 10 mins. Serve with plain rice.
2. Chitol Fish Fry
Ingredients:
- Chitol steaks – 4 pieces
- Turmeric – 1 tsp
- Red chili powder – 1 tsp
- Lemon juice – 1 tbsp
- Salt – to taste
- Mustard oil – 3 tbsp
Steps:
- Marinate fish with turmeric, chili, salt, lemon juice – 20 mins.
- Heat oil, shallow fry each piece 4–5 mins/side.
- Serve hot with onions and lemon wedges.
3. Chitol Macher Kalia (Rich Bengali Gravy)
Ingredients:
- Chitol steaks – 500g
- Onion – 2, sliced
- Tomato – 1
- Ginger-garlic paste – 1 tbsp
- Bay leaf – 1
- Cinnamon – 1 inch
- Clove – 2
- Turmeric – 1 tsp
- Red chili powder – 1 tsp
- Garam masala – ½ tsp
- Mustard oil – 4 tbsp
- Water – 2 cups
Steps:
- Fry fish steaks with turmeric, set aside.
- In oil, add bay leaf, whole spices, onion, tomato.
- Add ginger-garlic, all powdered spices.
- Add water, bring to boil.
- Add fish, simmer 10 mins. Garnish with garam masala.
4. Chitol in Mustard Sauce (Shorshe Bata)
Ingredients:
- Chitol fish – 500g
- Black & yellow mustard seeds – 1 tbsp each
- Green chilies – 3
- Mustard oil – 4 tbsp
- Salt – to taste
- Turmeric – ½ tsp
- Water – 1.5 cups
Steps:
- Soak mustard seeds, grind with chilies into a paste.
- Lightly fry fish. Set aside.
- In oil, add paste, turmeric, salt, water.
- Add fish and cook on low flame 10–12 mins.
5. Chitol Kofta Curry (North Indian style)
Ingredients:
- Chitol fish mince – 500g
- Besan (gram flour) – 2 tbsp
- Green chilies – 2, chopped
- Ginger – 1 tsp
- Garlic – 1 tsp
- Onion – 1, chopped
- Tomato puree – ½ cup
- Oil – 4 tbsp
- Cumin seeds – ½ tsp
- Garam masala – ½ tsp
- Turmeric – ½ tsp
- Salt – to taste
Steps:
- Mix fish mince, besan, spices. Shape koftas and shallow fry.
- In oil, cook cumin, onion, tomato puree.
- Add turmeric, salt, water (1 cup).
- Add koftas, cook covered 10 mins.

Ingredients:
- Chitol fish mince – 500g
- Thai red curry paste – 2 tbsp
- Kaffir lime leaves – 4 (chopped)

- Cornflour – 1 tbsp
- Oil – for frying
Steps:
- Mix all ingredients. Make patties.
- Shallow fry until golden.

- Olive oil – 2 tbsp

- Grill on medium flame 5 mins/side.
